Since we started in 2019, our distillery has been located in an agricultural barn with no windows and access via single track roads. Whilst it was a great place to start, the location has ended up holding us back and restricting our growth in multiples of ways. Now, after years of searching, we have the wonderful opportunity of relocating to a new, beautiful building at Upper Meend Farm in Monmouthshire, also known as Humble by Nature. The new location is well insulated with underfloor heating, windows galore and better access, enabling us to welcome visitors all year round, host events and improve our sustainability.
However, the move will be very costly. Once everything is factored in, including fitting out, plumbing and electrical work, servicing and converting the still to a new power source and the move itself, it will be at least ÂŁ20,000. As a small business we lack the resources to finance this on our own so we need your help to make this happen!

These are our favourite pubs in the region, offering a great atmosphere, excellent food and drinks and often stunning views of the river (no wonder two of them are called The Boat!)

The Boat Inn, located in the picturesque Monmouthshire village of Penallt, is arguably the most charming riverside pub in the Wye Valley. Located right by the river, the view is enhanced by the old railway bridge looming above. Crossing this bridge (which was once a crossing for steam trains on the Wye Valley Railway) from Redbrook is also the best way to reach the pub. The distance between the pub and the next railway halt at Redbrook was once believed to be the shortest between two stops on the national rail network.
In fine weather, the pub's raised garden area, known as "the grotto", is a popular spot for customers to relax and take in the views of the rock face stream and the river. In times past, the pub served a bustling boat trade, and even today, it's not uncommon to see passing canoeists stop by for refreshments.Â
The Wild Hare is a historic pub located in the village of Tintern. The pub formerly known as The Royal George has been around since the 18th century and has a rich history. The interior of the pub is full of character, with a warm and welcoming atmosphere. The pub also has a great reputation for its food, with a menu that features a range of pub classics and local specialties. In Tintern, the Wild Hare is the place to socialise and meet the locals, and is very much the heart and soul of this characterful and welcoming village.
Ye Olde Ferrie Inn sits right in the centre of Symonds Yat, near several nationally significant historical sites such as Goodrich Castle and the renowned Symonds-Yat rock, which offers breathtaking views and is home to Peregrine Falcons. It is a centuries old pub which has been transformed into a modern gastro pub while still keeping all of its original charm. It has one of the best food offerings in the area, and in the summer the big terrace is an incredible place to watch the river while enjoying a Wye Valley Gin and tonic in the sun. You can rent canoes from right outside, and there is a horsebox shop called âWye Go With The Flowâ where you can show your love for the River Wye by buying some good looking hoodies and other merch, and even their own Wye Go With The Flow Gin made in collaboration with us.
Across the river from Ye Old Ferrie is The Saracens Head, another centuries-old riverside pub that sits in a prime location surrounded by tranquil rapids, and dramatic cliffs. The area surrounding this pub is a delightful place to explore and attracts hikers, cyclists, canoeists, and fishermen. The interior of the pub is full of character, with exposed wooden beams, open log fires, and a cosy atmosphere. The pub also has a great reputation for its food, with a menu that features a range of traditional pub classics and local specialties. If you peek up at the hill behind the pub, you will see the famous house from the Netflix series Sex Education, which in real life is a holiday house called the Chalet. The ferry to the other side of the river is operated by the staff at Saracens Head and only costs a few pounds. Ask in the bar and they will take you over!
The Lion is our closest pub, and the heart of the community in Trellech. A pub known for its lovely and lively atmosphere as well as a great Sunday roast and different events like Burns night and gin tasting nights. A great place to stop for a pub lunch after a tour and tasting at the distillery!
Located in the historic town of Chepstow, The Boat Inn is a traditional riverside pub that is steeped in history. It has been around for over 500 years and has undergone several transformations over the years. The pub offers a great atmosphere, with a warm and welcoming interior, outdoor seating overlooking the River Wye, and a menu that features a range of pub classics and local specialties. They have live music every Thursday night, which turns the place into a lively meeting place for all of Chepstow.Â
The Queenâs Head used to be the smallest pub in Wales, but has now extended with a small room in the back. It still has the same micropub charm. When you walk in the pub you feel like youâre entering someone's living room, and you will always end up having a conversation with someone you donât know. The friendliest and most lively pub in Chepstow. They also have a great selection of beer, both traditional ales and modern IPAâs from some of the most inventive breweries in the UK. It's currently holding the title of CAMRA best pub in Wales.
The Old Court Hotel, set in the picturesque Wye Valley in Symonds Yat West, Herefordshire, is a family-run hotel that exudes historical charm and character. Housed in a Grade 2 Manor House that was once the residence of Lieutenant General John Graves Simoco, the founder of Upper Canada, this hotel offers a unique glimpse into the past coupled with modern comforts. The hotel is renowned for its home-cooked food and commitment to local ingredients.
This pub was saved by the community after a 10 year fight and is now run by a combination of volunteers and local staff. The vibe is friendly and community oriented, and there is always someone to chat to. Look out for a memorial of a locally beloved peacock! A perfect place for a full English breakfast before you head out on the Offa's Dyke path.
The Miners in Sling has a reputation for being one of the best foodie pubs in the area. The decor is elegant but simple, but the food speaks for itself. It is the favourite Sunday lunch place for anyone in the know in this area. They have a big focus on fresh and locally sourced ingredients and a menu that changes daily. They work closely with local suppliers like us, and this is the place where you see other local producers dine because the food is so amazing.Â

Hereâs how you do it:
1. Forage for sweet woodruff
Sweet woodruff is in season from around early May until mid-June. It is mostly found in ancient woodlands, hedgerows and riverbanks, as a groundcover in shady areas with moist, slightly acidic soil. The leaves, rather than the flowers, are preferred for harvesting as they are more flavorful. To gather sweet woodruff, simply snip off the top few leaves and leave the base of the plant intact to continue growing. Follow foraging etiquette, and donât take too much from one place. Always leave some for others and for further growth.
2. Dry the sweet woodruff
Sweet woodruff needs to be dried or wilted to intensify its flavor and fragrance. You can leave it out in the sun for a couple of days, or if you have a dehydrator (like we do!), use it to slightly but not completely dehydrate the sweet woodruff tips. You will notice a dramatic change in smell as it dries. This is because Sweet Woodruff contains a chemical compound known as coumarin, which has a naturally sweet aroma that is released when the herb dries. The enzymatic action that occurs during the drying process is what frees this fragrance from the plant material, resulting in a more intense aroma.
3. Infuse the white wineÂ
Pour out a little of the wine from the bottle, and stuff in the wilted sweet woodruff. Make sure the woodruff is completely covered in wine. Let steep overnight (24 hours is ideal, but shorter or longer infusions work as well! Find your sweet spot!). After the infusion, strain the sweet woodruff out of the wine, and itâs ready to use in the punch!
4. Make the punch
Pour the sweet woodruff infused white wine into a large punch bowl. Add prosecco and sliced strawberries. You can also add a bit of sparkling water if you want, for a less alcoholic drink. Serve well chilled.

Early May to mid-June is the right time to go foraging for Sweet Woodruff. It is easy to find once you know what to look for, but it needs specific conditions to be able to thrive. It typically grows in shady areas, such as woodlands and hedgerows. Its narrow stalk is famously square, a surefire way to identify the plant. The leaves are dark green, narrow and lance shaped with a slightly rough texture. Successive whorls of 6-8 leaves grow around the stalk like little stars.Â
When in season, in spring and early summer, sweet woodruff produces clusters of small, star-shaped white flowers that have a sweet, honey-like scent. In the Wye Valley, Sweet Woodruff can be found growing in abundance in the ancient woodlands and along the banks of the River Wye. The moist, shady conditions of this area are perfect for Sweet Woodruff to thrive, and its delicate beauty adds to the natural charm of the landscape.
Sweet Woodruff has a rich history of use across Europe and the UK. In the middle ages, Sweet Woodruff was widely used as a strewing herb, spread out on the floor or stuffed in mattresses to hide unpleasant odours and repel insects.
The plant's botanical name, Galium odoratum, comes from the Greek word gala, meaning milk, as Sweet Woodruff was traditionally used to curdle milk for cheese making. Odoratum, from Latin, refers to the plant's distinctive scent, reminiscent of freshly cut hay and marzipan, which is due to the presence of coumarin, an aromatic organic compound. Although the plant is named Sweet Woodruff, it is not highly fragrant when growing in the garden, as the coumarin fragrance is released when the plant is dried.
Sweet Woodruff also plays an important part in traditional folklore and superstition. In medieval times, it was believed that the herb had mystical properties and was used as a talisman to ward off evil spirits. In some cultures, it was also believed that Sweet Woodruff could ward off witches and protect against evil spells.
In Germany, Sweet Woodruff is called Waldmeister (Master of the Woods), and has traditionally been used to flavour May Wine, a sweet, aromatic wine made with white wine, sugar, and the herb. This drink is typically consumed on May Day, which is a big event in Germany. Germans also use it to flavour syrup, jelly, desserts, ice creams and sweets. In Berlin you can enjoy a Berliner WeiĂe with "Waldmeister Schuss", a sour beer with a shot of Sweet Woodruff added.
As with any plant, it's important to respect its natural habitats and populations, and to only harvest Sweet Woodruff sustainably. Follow foraging etiquette, and donât take too much from one place. Always leave some for others and for further growth. By doing so, we can ensure that this fragrant and versatile herb remains a part of our culture and heritage for generations to come.

It works like this..
Instead of moving an entire production, actors, crew and equipment from location to location, everything is shot in one studio in front of a giant curved screen which displays the scene in realtime. Unlike using a green screen, this allows the actors to perform in a space which looks and feels like a real location and responds to the camera movements. It goes way, way deeper than that of course but this is the gist of it.
So in the case of our Wye Valley Gin ad, the kitchen scene is not filmed in a kitchen and the forest scene is not filmed in a forest. They are both filmed in the same studio.
The benefits of virtual production don't stop there. Compared to traditional filming methods, it's quick, inexpensive, extremely flexible and has a very low carbon impact.
Since the sustainable side of virtual production matched so well with our refill can plans, we jumped at the chance to work with RecodeXR and produce a video to help promote it! So we shipped a bottle of Wye Valley Gin and a prototype refill can off to them in Manchester. A couple of weeks and a minimal amount of back and forth later, this video came back and our jaws hit the floor.

Aquavit is a bit like gin's Scandinavian cousin. Both are botanical spirits. Both are distilled in more or less the same way. Both are delicious. The difference? With aquavit caraway (and / or dill) is the star of the show instead of juniper in gin.
In Scandinavia aquavit is usually enjoyed straight as part of celebrations and often with food. However, around the world aquavit is acquiring a reputation as a 'cocktail chameleon' for its ability to twist classic cocktail recipes into something new and exciting.

Silver Circle Distillery is a craft spirits distillery in Catbrook, Monmouthshire, 40 minutes from Bristol and 50 minutes from Cardiff. We launched the distillery in July 2019, and have a growing reputation for developing exciting spirits and offering high quality experiences to visitors in the Wye Valley.
We are looking for motivated and responsible employees to join our small team and help us grow our business.
The assistant distiller will be an integral part of our team, and will take part in the development of Silver Circle products, by creating and developing various craft spirits, assisting in distillation planning and execution, production, managing inventory, and regulatory compliance.
The position will be divided between distilling related duties and public facing work. At our distillery, the distillers lead the tours and âMake your own ginâ experiences, as well as represent us at different events. This will also be a part of your day to day work.
Distilling experience is not a must, but extensive experience and knowledge about spirits and how they are made is essential. This is an ideal position for someone with experience in bars or the drinks industry looking to develop their interest and skills. Teamwork is key, as well as living the vision and culture of the distillery. Your personality and passion is the most important thing, we will provide training in all distillery processes.

]]>Here's a Christmas cocktail you can try making at home. We've named it the 'Cabinet Christmas Party' because you can easily make it with ingredients you probably have in your kitchen cabinet at this time of year and it really gets the party started.

If you've never made a cocktail at home before you might think you need to follow golden rules such as 'always start with the classics'. With a Cabinet Christmas Party, you can ignore the rules. Cheers to that!
Ingredients:
- 50ml Wye Valley Gin
- 2 heaped tsps of cranberry sauce
- 1Â heaped tsp of honey (preferably runny)
- 15ml lime juice
Method:
1. Shake all ingredients with ice until cold.
2. Double strain into a coupe / coupette / stemmed glass.
The Bloody Mary cocktail has several origin stories but the most widely accepted claims that the Bloody Mary is 100 years old this year and for that reason alone, itâs a story worth retelling.
The story goes that a young bartender named Fernand âPeteâ Petiot invented the Bloody Mary at Harryâs New York Bar in Paris in 1921. At that time, Harryâs was a hangout for US expats seeking the familiarity of an American style bar in the days of prohibition and it became popular with many stars of the day including Humphrey Bogart, Ernest Hemingway and Rita Hayworth.
Over the years the Bloody Mary has become known as a hangover cure through itâs classic combination of poison (alcohol) and remedy (tomato juice) and has developed a unique status as a âlunchtime cocktailâ. These days, 100 years after its creation in Paris, the Bloody Mary is central to brunch culture around the world and itâs this association with the social aspect of meeting with friends the morning after for food and a drink that we find so appealing about it.
IWSET Spirits Educator Rose Brookman perfectly sums it up:
âThere has always been a morning after the night before, and there has always been the search for the elusive elixir that will stave off the dreaded symptoms of the inevitable hangover. The Bloody Mary is the closest we have got to such a potion; with its perceived restorative powers replenishing the body and aiding recovery the next day. It has a strong association with friendship, and the supportive group mentality of surviving the pain of the morning after together. It is often consumed at a time where the bonds of friendship are sealed amongst the reminiscing of the night before.â
Although it probably wasnât created to be a hangover cure specifically, it is this reputation that has shaped the Bloody Mary into the cocktail we know and love today. In a way, the Bloody Mary has taken ownership of its own story, but the 100 year anniversary is as good a reason as any to celebrate with one this year.

In addition, Black Garlic Vodka has been awarded 2 stars. Ordinarily found in our Ultimate Bloody Mary Kit, the spirit was judged alone in this instance as the kit didn't fit into any specific category. The kit also includes 11am Hot Sauce made by multi-award winning producer Parva Spices as well as recipe cards from us and Masterchef alumni Imran Nathoo.
Wye Valley Gin was also awarded a star and the judges comments were perhaps the most rewarding of all for us since this was the first product we developed and released as Silver Circle. Great Taste has recognised that this is a unique gin with a story to tell so we're very proud of that.
