How to make a Vegan Gin Sour

Here's how to make a delicious gin sour with no eggs, just miraculous, vegan friendly, chickpea juice. Yep, you read that right. The water from a can of chickpeas (aquafaba) can be used as a replacement for egg whites in cooking. It's often used in vegan food and it works a treat in a gin sour.

This cocktail is simple to make and there's a good chance you have everything you need at home already. It also works exceptionally well with our own Wye Valley Gin.

You will need:

• Ice
• 25ml lime juice (about 1 lime)
• 15ml sugar syrup
• 50ml Wye Valley Gin
• 2-3 dashes Angostura Bitters (optional)
• 20ml Aquafaba (juice from a can of chickpeas)

Put all ingredients into a cocktail shaker and shake hard. Strain into a chilled glass and garnish with lime zest (or in the case of the photo, hibiscus).
