Silver Circle Distillery and The Dell Vineyard have come together to create Y Gwyllgi, a Pinot Noir Gin that uses the beautiful leftover skins, pulp and seeds from the winemaking process combined with the wild flavours of foraged Wye Valley botanicals.
After lovingly nurturing a select block of Pinot Noir throughout the growing season, it seemed a huge shame not to utilise this flavour-packed waste product. So we infused it with Wye Valley Gin and the result is something truly special!
Named after a Welsh mythical beast who appears at twilight, Y Gwyllgi is a juicy and naturally hazy gin made for mixing in a Negroni or adding to tonic for a festive G&T. It tastes incredibly Christmassy and would look fabulous nestled under the Christmas tree.
There are only 200 bottles of Y Gwyllgi available so grab one now while you can. And if you can’t possibly wait for the postman, The Dell Vineyard will be at Usk Christmas Market this weekend (2nd-3rd Dec) and we’ll have some with us at the Christmas Fayre at Chepstow Racecourse (2nd Dec). Plus you can always pop into our distillery shop between 10-5pm, Tuesday to Saturday.
